Lai Fun Noodles

Lai Fun has been in the family repertoire for ages but has been updated with current times using the Philips Pasta Maker. Making homemade noodles has never been a breeze with this simple recipe that you can execute in minutes.  With just five key ingredients, you can make it any time. 

This noodle dish is traditionally enjoyed with a dark “Sook-Dei San Dei”    (生熟地汤) and served with “Joong Gung” (干粽子 – glutinous rice puffs) but can be served with your favourite go-to broth, or stir-fried them with poultry – you cannot go wrong.

The five key ingredients are rice flour, plain flour, wheat flour, salt, and water. Using the Philips Pasta maker machine, we had to adapt the recipe a little by adding Xanthum Gum to combine the dough together in order to get smooth beautiful rice noodles.

For this noodle, please note that we use the spaghetti shape disc, however pls feel free to use any pasta shape disc you like.

Ingredients
  

  • 150 grams Rice Flour
  • 70 grams Plain Soft Wheat Flour We used Il Molino Soft 00 Flour
  • 50 grams Wheat Starch
  • 5 grams Xanthum Gum
  • 150 grams Hot Boiling Water
  • 2 tbsp Oil
  • 1/4 tsp Salt

Notes

  1. Using the Philips Pasta machine, it is essential that all ingredients are weighed properly.
  2. Combine all dry ingredients together and mix thoroughly.
  3. Add 2 tablespoons of oil to the flour mix. In this recipe, it is preferable to use canola oil or grapeseed oil – oils that are neutral in taste.
  4. Put combined ingredients into the pasta machine and let it mix for 2-3mins.
  5. Start a 3minute mix cycle then slowly add in the hot boiling water – we find that 145 grams to 150 grams of water will create the right dough mix depending on the humidity of the area you live in.  Whilst there may not be a fully shaped dough in the mixer, do not be alarmed and pls do not add in more liquid.
  6. The noodles will appear after approximately 3 minutes.
  7. In the meantime, have a pot of hot water simmering away on the stove.
  8. The next key essential step is that the noodles must be extruded into a bowl of hot boiling water. 
  9. Cut noodles to preferred size and transfer hot bowl of water with noodles into a pot of simmering hot water.
  10. When noodles are opaque after 3-5 minutes, transfer them to a bowl of cold water and run it through a tap. 
  11. Noodles are now ready to eat.
