Lai Fun Noodles
A classic family favourite that has been updated to suit contemporary taste. Freshly home made noodles using Philips Pasta Maker machine and paired with homemade broth is a delight for any occasion.

- 150 grams Rice Flour
- 70 grams Plain Soft Wheat Flour We used Il Molino Soft 00 Flour
- 50 grams Wheat Starch
- 5 grams Xanthum Gum
- 150 grams Hot Boiling Water
- 2 tbsp Oil
- 1/4 tsp Salt
- Using the Philips Pasta machine, it is essential that all ingredients are weighed properly.
- Combine all dry ingredients together and mix thoroughly.
- Add 2 tablespoons of oil to the flour mix. In this recipe, it is preferable to use canola oil or grapeseed oil - oils that are neutral in taste.
- Put combined ingredients into the pasta machine and let it mix for 2-3mins.
- Start a 3minute mix cycle then slowly add in the hot boiling water - we find that 145 grams to 150 grams of water will create the right dough mix depending on the humidity of the area you live in. Whilst there may not be a fully shaped dough in the mixer, do not be alarmed and pls do not add in more liquid.
- The noodles will appear after approximately 3 minutes.
- In the meantime, have a pot of hot water simmering away on the stove.
- The next key essential step is that the noodles must be extruded into a bowl of hot boiling water.
- Cut noodles to preferred size and transfer hot bowl of water with noodles into a pot of simmering hot water.
- When noodles are opaque after 3-5 minutes, transfer them to a bowl of cold water and run it through a tap.
- Noodles are now ready to eat.
