Vanilla Sugar Cookies
This is a highly adaptable recipe. It is great for decoration, you can use it when children come over for a playdate as an activity to do. The sky’s the limit for this recipe.
Recipe: (Makes about 30 cookies)
125g unsalted butter softened
160g caster sugar
1 large free range egg
1 tsp vanilla extract
240g plain flour sifted
Colouring paste of your choice
Instructions:
1. Cream the softened unsalted butter and sugar together in your mixer. Go slowly at first and let it beat for about 4 min using the paddle attachment of your mixer till its pale and fluffy.
2. Now add the egg and the vanilla extract. Beat it for 2 mins till its well combined.
3. Take the bowl out and add the sifted flour into the cream and put it back in the mixer and let it mix or fold slowly for a minute or so.
4. When it is all well mixed. Split the dough into 3 bowls (you can eyeball it or use a measuring scale) equally. Â Put in the coloring paste you like. We will go for plain, red and purple. You can mix in the coloring paste by mixing it with a spatula or you can use your hands. This dough is around 560 grams. After splitting to 3 separate doughs of 185g, its time to mix in the color paste
5. Refrigerate the three separate dough for  20 minutes.
6. Roll the cookie dough to about 4mm thick. Cut out your cookie dough into shapes you like.
7. Bake for 175 degrees for 10 to 12 mins till its cooked.
